INGREDIENTS
- 5 oranges
- 3 egg yolks
- 480g milk
- 20g granulated sugar
- 110g whipping cream
- 12g gelatin sheets
INSTRUCTIONS
- Cut off the tops of the oranges, scoop out the flesh, peel one of the orange skins and set it aside.
- Heat the orange peel with milk until small bubbles appear, then strain and set aside.
- Mix egg yolks with sugar, add a few drops of lemon juice to remove the eggy smell.
- Pour the strained milk into the egg yolks, whisk quickly until smooth.
- Pour back into the pot, add softened gelatin sheets and stir until melted, then add whipping cream and mix well.
- Pour into the orange peel, chill in the fridge for 4 hours until set.

- 20克 白砂糖
- 110克 淡奶油
- 12克 吉利丁片
做法
- 橙子顶部切掉,挖出果肉,将其中一个橙皮削掉备用。
- 橙皮和牛奶一起加热至冒小泡,过滤备用。
- 蛋黄加白砂糖搅匀,滴几滴柠檬汁去腥。
- 将过滤好的牛奶倒入蛋黄中,快速搅拌。
- 倒回锅中,加泡软的吉利丁片搅拌至融化,再加淡奶油拌匀。
- 倒入橙皮中,冷藏4小时至凝固。
