INGREDIENTS
- 1 section lotus root
- 10 pcs dried chilies
- 1 tbsp minced garlic
- ½ tbsp minced ginger
- 3 scallion rootrs
- Some white sesame
- Some cilantro
- 1 tbsp white vinegar
- 2 tbsp cornstarch
- 2 tbsp light soy sauce
- 1 tbsp Zhenjiang vinegar
- 1 tbsp oyster sauce
- 2 tbsp sugar
- 2 tbsp water
INSTRUCTIONS
- Slice the lotus root into thick pieces, then cut each piece in half.
- In a bowl, add enough water to cover the lotus root and mix in 1 tbsp of white vinegar. Stir and soak for 5 minutes.
- Drain well, then add 2 tbsp of cornstarch and toss until the lotus root is evenly coated.
- Set the pot to Stir-Fry mode / 200° / 10 minutes, and add the lotus root to the pot to fried.
- Now prepare the sauce. Add 2 tbsp sugar, 2 tbsp light soy sauce, 1 tbsp Zhenjiang vinegar, 1 tbsp oyster sauce, and 3 tbsp water to a bowl and mix until well combined.
- Set the pot to Stir-Fry mode / 170° / 5 minutes. Add the scallion roots, minced ginger, and minced garlic, and sauté until fragrant. Then add the dried chilies and the prepared sauce, and stir-fry briefly.
- Set the pot to Stir-Fry mode /0° / 2 minutes. Add the fried lotus root to the pot and stir-fry until evenly coloured. Add the cilantro and white sesame and continue stir-frying until well combined.

- 1节 莲藕
- 10条 辣椒干
- 1大匙 蒜末
- ½大匙 姜末
- 3根 葱根
- 一些 白芝麻
- 一些 香菜
- 1大匙 白醋
- 2大匙 玉米淀粉
- 2大匙 生抽
- 1大匙 浙醋
- 1大匙 蚝油
- 2大匙 白糖
- 2大匙 清水
做法
- 将莲藕切成厚片,再对半切开。
- 在碗中加入没过莲藕的清水,倒入 1 汤匙白醋,搅拌后浸泡 5 分钟。
- 莲藕沥干水分后,加入 2 大匙的玉米淀粉,拌匀至莲藕均匀裹上淀粉。
- 将锅设置为 Stir-Fry 模式 / 200° / 10 分钟。将莲藕放到锅里炸。
- 现在准备酱汁。加入2大匙白糖,2大匙生抽,1大匙浙醋,1大匙蚝油及3大匙清水到一个小碗里搅拌均匀。
- 将锅设置为 Stir-Fry 模式 / 170° / 5 分钟。加入葱根, 蒜末及姜末到锅里爆香。再倒入辣椒干及调好的酱汁继续翻炒。
- 将锅设置为 Stir-Fry 模式 / 0° / 2 分钟。将炸莲藕倒到锅里翻炒至上色均匀。最后加入香菜及白芝麻,翻炒均匀即可。
