红烧茄子-68
INGREDIENTS
  • 2 pcs eggplant
  • 1 tbsp cornstarch
  • 1 tbsp minced garlic
  • 2 pcs bird's eye chili
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • ½ tbsp oyster sauce
  • A little salt
  • A little sugar
  • An appropriate amount of water
  • Some chopped scallions
  • Some cilantro
INSTRUCTIONS
  1. Cut the eggplant into irregular chunks. Sprinkle a ring of salt over them. Mix well and marinate for 5 mins.
  2. Prepare a small bowl. Add the minced garlic, chopped bird’s eye chili, 1 tbsp of light soy sauce, 1 tbsp of dark soy sauce, ½ tbsp of oyster sauce, a little of salt, a little of sugar and an appropriate amount of water. Mix well.
  3. Rinse the eggplant in the bowl with water and squeeze out the excess water.
  4. Sprinkle 1 tbsp of cornstarch on top and mix well.
  5. Set the pot to Stir-Fry mode / 180° / 10 mins. Add oil, stir-fry the eggplants until softened then pour in the prepared sauce.
  6. Add the chopped scallions and continue stir-frying.
  7. Remove from pot and sprinkle some cilantro on top.

  • 1大匙 玉米淀粉
  • 1大匙 蒜末
  • 2条 小米椒
  • 1大匙 生抽
  • 1大匙 老抽
  • ½大匙 蚝油
  • 少许 盐
  • 少许 糖
  • 适量 清水
  • 一些 葱花
  • 一些 香菜
做法
  1. 将茄子切成不规则小块,撒上一圈盐,抓拌均匀,腌制 5 分钟。
  2. 准备一个小碗,加入蒜末、小米椒、1 大匙生抽、1 大匙老抽、½ 大匙蚝油、少许盐、少许糖和适量清水,搅拌均匀。
  3. 将茄子倒入清水中冲洗一下,并挤干多余水分。
  4. 撒上 1 大匙玉米淀粉,拌匀备用。
  5. 将锅设置为炒模式 / 180° / 10 分钟。倒入适量食用油,下茄子翻炒至变软后倒入调好的料汁。
  6. 加入葱花继续翻炒。
  7. 起锅后撒上少许香菜即可。
